The explanation for this is quite simple. Here's what's happening. This is a square plate sitting on top of a mechanical vibration shaker head (such as a speaker). The different mechanical resonant modes appear at different vibration frequencies (the change in the sound you are hearing). As the frequency increases, the number of lobes increases (more complex patterns start to appear). The rice is simply sliding towards the areas where the plate is moving the LEAST.
